Wagyu restaurants in South Dakota

Eighteen South Dakota restaurants publish here and two clear the full sourcing standard, which leaves sixteen resting on a menu claim. Both documented rooms are in Sioux Falls, so it is the state's only city page, and the Black Hills towns carrying the rest of the state's listings, Custer, Deadwood, Rapid City and Spearfish, have documented none of theirs.

For a state with two documented rooms, they sit about as far apart as two rooms can. Black Watch in Sioux Falls holds a licence on the official Kobe Beef Association registry and had Kobe on its menu when we last looked, so it carries the Certified Kobe badge and is the only South Dakota room to reach the top tier. It documents a named Japanese brand alongside the A5.

Blue Rock Bar and Grill, a few minutes away, documents the other end of the range entirely. Its American Wagyu is F1 crossbred beef from North 40 Beef of Pender, Nebraska, a working ranch a couple of hundred miles down the road that this directory publishes in its own right at the top farm tier. So one Sioux Falls room imports the most tightly controlled beef in the world and the other names the ranch next door, and the city has nothing in between.

The gap between advertising and evidence is the second widest of any state here, sixteen menu claims against two documented rooms, behind only Utah. It is also the most tractable kind of gap: eleven of the eighteen published rooms are in Sioux Falls itself, within a few square miles, so most of that backlog is one afternoon's reading rather than a sweep.
