This listing's current published materials advertise Wagyu, but the offering does not meet our full verification standard for provenance. It carries no authenticity badge; undisclosed details remain explicitly unverified.

Why it's listed

A whole-animal butcher shop and restaurant on Bridge Street, open seven days with a large whiskey list. Four Wagyu items are on its current menus: a 7 oz Wagyu Gold NY strip and a 6 oz Wagyu tenderloin on the Butcher's Cut steak list, a Wagyu sirloin entree, and a Wagyu beef tartare marked limited availability. The three steaks each credit Snake River Farms of Idaho, and a Wagyu steak and eggs runs at brunch. No breed generation is stated anywhere. The ribeye and hanger beside them come from other ranches and are not Wagyu.

Authenticity flags

  • The Wagyu steaks here are American Wagyu from Snake River Farms in Idaho, not Japanese beef. The 'Gold' on the strip loin describes marbling, and the menu does not say what generation of Wagyu cross the cattle are.
  • Only part of the Butcher's Cut steak list is Wagyu. The 14 oz ribeye and the New York strip are from Double R Ranch and the 8 oz hanger is from River City Meats, and none of those three is sold as Wagyu.
  • The Wagyu beef tartare is marked limited availability, so it may not be on when you visit, and unlike the steaks it names no producer.

Common questions

Does Butcher's Union serve real Wagyu?
Its own current menu advertises Wagyu, and that claim was read directly on August 17, 2026. What the menu does not do is say which Wagyu: no prefecture, grade, breed status or producer is published, so the sourcing cannot be checked from outside. That is a gap in what is written down rather than a suggestion that anything is wrong with the beef, and plenty of kitchens buy carefully without printing the details.
What kind of Wagyu does Butcher's Union serve?
Its menu discloses Snake River Farms SRF Gold (marbling tier) and Snake River Farms. Each of those is taken from the venue's own current materials rather than from a review or a listing site, and the evidence behind it is quoted further down this page.
Why is Butcher's Union listed without a Wagyu badge?
Because a badge here means the sourcing was checked, not that the food is good. This listing is published because the venue genuinely advertises Wagyu on its own current material, and it carries no badge because that material does not say which Wagyu. If the venue publishes the prefecture, grade, breed status or producer, the listing can move.
