What does this mean? →Why it's listed
Chef-owner Matthew Harris's Southern-inflected New American room in Park City. Its current dinner menu (Squarespace PDF dated July 9, 2026) is open and trading, and its one Wagyu-lineage dish is the Beef & Barley entree built on a Mishima sirloin. Mishima Reserve is a named American Wagyu producer, so this is a real Wagyu offering, but the menu names no breed generation (fullblood/purebred/F1) and does not print a grade, so no authenticity badge is earned. The strip and tartare seen in earlier writeups are not on the current seasonal menu.
