Forty-five Utah restaurants publish here and four clear the full sourcing standard, which leaves forty-one resting on a menu claim. That is more than ten advertised rooms for every documented one, the widest such gap of any state in this directory. Utah advertises Wagyu enthusiastically and, so far, documents it less often than anywhere else.

The state splits in two, and the split is the interesting part. Salt Lake City holds twenty-one published listings and two verified rooms. Park City, a ski town an hour up the canyon, holds twelve published listings and the same two verified, which is more than a quarter of the state's listings in one small resort town. Eleven Utah cities hold a published room and only those two clear the threshold for a page of their own.

All four verified rooms document Japanese Wagyu and all four sit at the second tier, meaning each shows what it serves without carrying both the named origin and the grade that the top tier asks for. Two are steakhouses and two are Japanese rooms. Edge Steakhouse in Park City is the only one of the four to name a producer, citing Mishima Reserve, and the three published Utah Wagyu farms in this directory are named by nobody in the state.

Zero Utah rooms hold a licence on the official Kobe register and zero carry the Certified Kobe badge. Nothing verified in the state documents American or Australian beef either, so the whole documented pillar here is Japanese A5.
