Wagyu restaurants in Salt Lake City, Utah

Salt Lake City advertises Wagyu more freely than any other city on this site, and documents it less. Twenty-one of its restaurants publish here and two clear the full sourcing standard, so nineteen put the word on a current menu without saying where the beef came from. That is nine menu claims for every documented room, the widest ratio of any city with a hub here, and it is the most useful thing to know before booking.

Zero Utah restaurants hold a licence on the official Kobe Beef Association registry, and zero carry a Certified Kobe badge. The state has no registry presence at all, so the word Kobe on a menu here is supported by nothing, and two of the rooms in this city use it anyway.

Neither of the two that clear the standard is a steakhouse, which is worth pausing on in a market with this many of them. Both are Japanese rooms and both get there by naming a prefecture alongside the grade. The stronger of the two serves an A5 Miyazaki striploin at twelve BMS on a hot stone at the table rather than off a grill; the other runs an omakase and sits below the top price tier, making it the cheaper way into documented Wagyu in the city.

The pattern is plain enough to act on. The steakhouses here advertise Wagyu and do not say where it is from; the Japanese rooms say. That is not a claim that the steakhouses are selling anything other than what they say, only that they have not published enough to check, and in a city with this ratio the difference is the whole point.
