Wagyu restaurants in Wilmington, Delaware

Wilmington holds both of Delaware's documented Wagyu rooms and nearly half of the state's published listings. Four of its restaurants publish here and two clear the full sourcing standard, with two more resting on a menu claim we could read but not confirm to that standard.

The two documented rooms divide this directory's two halves neatly between them. Snuff Mill Restaurant, Butchery and Wine Bar documents American Wagyu at crossbred generation and names Rosewood Ranches of Texas, and it runs a butcher counter beside the dining room, so the cut you ate is a cut you can take home. Sullivan's is worth a note for what it is not. Four units of that chain publish in this directory and Wilmington is the only one that documents its Wagyu; the units in Detroit, Omaha and Leawood all stop at a menu claim. A chain more often prints one description across every location, so a single unit clearing the standard means somebody in Wilmington is buying and describing beef that its sibling rooms are not, and it is worth ordering there on that basis rather than on the name over the door.

Both rooms price at the top tier and both call themselves steakhouses, so price will not sort this city for you and format will not either. What separates them is origin: one American and traceable to a named Texas ranch, the other Japanese and graded. Zero Wilmington rooms hold a licence on the official Kobe registry and zero carry the Certified Kobe badge. The two remaining published venues advertise Wagyu without documenting where it came from.
