Why it's listed

A fine dining steakhouse inside the Inn at 500 Capitol in downtown Boise, open since May 2025 in the room Richard's vacated when its chef retired. The steak list is built on Wagyu: five of the six cuts are Wagyu and every one names its producer, with Snake River Farms Gold from Eastern Idaho on the tri-tip, skirt and zabuton, and Imperial Farms American Wagyu on the ribeye and New York strip. Lunch adds a Wagyu flank iron from a Seattle producer. None of the three producers publishes a breed generation, so the Wagyu percentage behind the beef is not stated.

Authenticity flags

  • Every Wagyu cut on the steak list names the producer it came from, which is more disclosure than most steakhouses offer. None of those producers publishes a breed generation though, and Snake River Farms Gold describes marbling rather than how much Japanese Wagyu genetics the cattle carry, so the breed percentage behind these steaks is not stated anywhere.
  • The lunch menu credits its Wagyu flank iron to Mashima Reserve while the restaurant's own dry aging page spells the same Seattle producer Mishima Reserve. It reads as a spelling slip rather than two different suppliers, but ask if you are following a particular producer.
  • The kitchen prints fresh menus daily and says so on the menu page, calling the online version a good guess but never gospel. A specific Wagyu cut may not be on that night, so call ahead if you are going for one in particular.

Does Hemlock serve real Wagyu?
Its own current menu advertises Wagyu, and that claim was read directly on August 17, 2026.
