The local link is the reason to read this page. One of the two names Davis Cattle Company, a family ranch at Cascade in Long Valley that has been incorporated since 1979, grazes Akaushi cattle on irrigated mountain pasture, and keeps no website at all. That last detail is what makes the citation worth something: a ranch with no marketing has nothing to be quoted from and no reason to appear on a menu except that it is the actual source. It is listed on this site, and the link between the two is among the shortest documented anywhere in this directory.

There is a wrinkle worth knowing. Those cattle do not finish in Idaho. Long Valley is excellent growing ground and poor finishing ground, with feed grain a long way off, so the yearlings go to Texas to finish for a well-known Akaushi programme. Splitting an animal's life across regions is standard American practice and it is the reason a beef label so rarely corresponds to one place, even when the ranch is genuinely local.

The other two verified rooms are steakhouses, and both name Snake River Farms, which is itself a Boise company, so the city's documented Wagyu is unusually close to home on two separate counts. One of them documents Japanese, Australian and American Wagyu separately rather than pooling them. The other lists a Kagoshima A5 whose cut the kitchen chooses daily, beside a named tenderloin from that same local supplier.

All three verified rooms document Japanese beef, all three price in the top tier, and zero hold a licence on the official Kobe Beef Association registry. The three remaining published venues advertise Wagyu without saying which.
