Eating Wagyu in Idaho
Eight Idaho restaurants publish here and three clear the full sourcing standard, which leaves five resting on a menu claim. All three documented rooms are in Boise, so it is the state's only city page, and Meridian holds the single listing outside it.
Idaho does something no other state in this directory does: every one of its documented rooms names a producer from Idaho. Chandlers Steakhouse and The Brickyard both name Snake River Farms, which is headquartered in Boise itself, and El Gaucho names Davis Cattle Company of Cascade, about ninety minutes north up the Payette. Nowhere else does a state's entire documented pillar source, on paper, from inside its own borders.
That is partly an accident of geography and partly the whole point. Snake River Farms is among the most widely cited American Wagyu names on this site, turning up on menus from Oregon to Rhode Island to Kentucky, and in Boise it is simply the local supplier. A diner reading that name on a Boise menu is reading a producer with an address in the same city, which is a very different thing from reading it in Providence.
All three rooms document Japanese A5 as well, and all three price at the top of the range. Zero Idaho rooms hold a licence on the official Kobe register and zero carry the Certified Kobe badge, and none of the three reaches the top provenance tier. Idaho is also one of five jurisdictions here where every documented room sits in one city, which in a state this size means Boise is the market.
