Its current menu carries a dedicated Wagyu section in which every line names an origin, a producer or prefecture, and a grade: a 3oz New York Strip at A5, Miyazaki, Japan; Zabuton and Marinated Short Rib at BMS 8-9, Westholme, Aus; Culotte at BMS 8-9, Stone Axe, Aus; Flat Iron at BMS 6-7, Rosewood, USA; and short rib finger, boneless short rib and hanger from Imperial, USA. The Miyazaki A5 line clears the Japanese standard outright.
