Menu claim only

This listing's current published materials advertise Wagyu, but the offering does not meet our full verification standard for provenance. It carries no authenticity badge; undisclosed details remain explicitly unverified.

Why it's listed

The Auberge dining room at Goldener Hirsch in Deer Valley's Silver Lake Village, an Alpine Austrian kitchen of schnitzel, fondue, spaetzle and Utah game where Wagyu runs as a premium thread rather than the concept. The current summer menus carry a hay smoked Wagyu tenderloin at 72 for dinner, a Wagyu raclette burger at 32 and a Wagyu steak frites at 66 for lunch, and a Wagyu hanger steak at 20 among the fondue accompaniments. No menu names an origin or a grade, and the only supplier credit is printed as 'misihima reserve'. Served daily.

Authenticity flags

  • Wagyu appears on four dishes across the lunch and dinner menus, and none of them names the country the beef comes from, its grade, or the ranch that raised it. Ask your server if that matters to you.
  • The lunch steak frites credits its beef to 'misihima reserve', a spelling that does not match any producer we can identify. If you want to know whose Wagyu you are eating, ask at the table rather than relying on the menu.

Common questions

Does The Hirsch serve real Wagyu?
Its own current menu advertises Wagyu, and that claim was read directly on August 16, 2026. What the menu does not do is say which Wagyu: no prefecture, grade, breed status or producer is published, so the sourcing cannot be checked from outside. That is a gap in what is written down rather than a suggestion that anything is wrong with the beef, and plenty of kitchens buy carefully without printing the details.
Why is The Hirsch listed without a Wagyu badge?
Because a badge here means the sourcing was checked, not that the food is good. This listing is published because the venue genuinely advertises Wagyu on its own current material, and it carries no badge because that material does not say which Wagyu. If the venue publishes the prefecture, grade, breed status or producer, the listing can move.
