It is worth being straight about the limits of these two. Both document Japanese A5, which is a real disclosure and enough to clear the standard, but neither names a prefecture, a farm or a producer. That is a level of detail plenty of cities on this site do reach, and it means the beef here is verified as Japanese A5 without being traceable any further.
There is a reasonable explanation. New Orleans restaurants are built on Louisiana ingredients and Creole and Cajun technique, and Wagyu enters that tradition as an imported luxury item rather than as something the city has a supply relationship with. A kitchen sourcing its shrimp and its andouille with enormous care may reasonably treat a Japanese steak as a bought-in speciality, and buy it the way everyone else does.
