St. Louis is the only city in this directory where two unrelated restaurants both buy their Wagyu from the same ranch. Six of its restaurants publish here and two clear the full sourcing standard, and both of those two serve beef from Maries River, a purebred American Wagyu herd at Westphalia, about a hundred miles west up the river the farm is named for. They are separate businesses, a brewery and a burger restaurant, that arrived at the same herd independently.

That is a different shape from every other city covered. Elsewhere the documented Wagyu sits in expensive steakhouses and arrives from Japan or from a national supplier. Here neither verified room is a steakhouse at all: one is a brewery in Tower Grove South and the other a burger restaurant in Carondelet, both at the second price tier, and the beef is local enough that you could drive to the pasture in under two hours.

Check the day before you go to the brewery. Its Wagyu burger is a Wednesday fixture rather than an everyday item, two Maries River patties smashed with American cheese and house pickles. The Carondelet room runs its Wagyu as an upgrade instead, a dollar fifty on top of any burger, which is the cheapest documented Wagyu in the city and possibly anywhere.

Zero of the two hold a licence on the official Kobe Beef Association registry and zero carry the Certified Kobe badge, so both reach the standard purely by documenting where their beef is raised. One of the four remaining published venues does hold a registry licence, but had no Kobe on its menu when it was last checked, and a licence is permission to buy Kobe rather than a promise that any is in the building tonight. Those four advertise Wagyu without documenting its origin and are listed separately below.
