Wagyu restaurants in Missouri

Twenty-six Missouri restaurants publish here and seven clear the full sourcing standard, which leaves nineteen resting on a menu claim. Three of the seven are in Kansas City and two are in St. Louis, the state's two city pages, and the last two are single documented rooms out in Springfield and Columbia.

Missouri is the most American state in this directory and it is not close. Five of its seven documented rooms carry an American Wagyu badge, which is seventy-one percent against Colorado's forty in second place. Where most states document imported Japanese beef and stop there, a Missouri kitchen names a domestic ranch.

One ranch is most of the reason. Maries River Wagyu of Westphalia supplies four of the seven, the tightest concentration on a single producer of any state with four or more documented rooms, and all four describe its cattle as purebred. That word is doing real work rather than decorating a menu: purebred sits between a fullblood animal and an F1 cross, it is the hardest of the three American breed statuses to find on a menu at all, and every purebred-badged room in this entire directory is in Missouri. No other state holds one.

Zero Missouri rooms hold a licence on the official Kobe register and zero carry the Certified Kobe badge, and none of the seven reaches the top tier. The format is the steakhouse at four of the seven, and the price split is wide for so small a pillar, four rooms in the top tier and three well below it, which is what happens when a brewery and a chophouse document the same ranch. Kansas City publishes fifteen Wagyu rooms and has documented three, the widest gap between advertising and evidence anywhere in the state.
