Eating Wagyu in Missouri
Twenty-six Missouri restaurants publish here and seven clear the full sourcing standard, which leaves nineteen resting on a menu claim. Three of the seven are in Kansas City and two are in St. Louis, the state's two city pages, and the last two are single documented rooms out in Springfield and Columbia.
Missouri is the most American state in this directory and it is not close. Five of its seven documented rooms carry an American Wagyu badge, which is seventy-one percent against Colorado's forty in second place. Where most states document imported Japanese beef and stop there, a Missouri kitchen names a domestic ranch.
One ranch is most of the reason. Maries River Wagyu of Westphalia supplies four of the seven, the tightest concentration on a single producer of any state with four or more documented rooms, and all four describe its cattle as purebred. That word is doing real work rather than decorating a menu: purebred sits between a fullblood animal and an F1 cross, it is the hardest of the three American breed statuses to find on a menu at all, and every purebred-badged room in this entire directory is in Missouri. No other state holds one.
Zero Missouri rooms hold a licence on the official Kobe register and zero carry the Certified Kobe badge, and none of the seven reaches the top tier. The format is the steakhouse at four of the seven, and the price split is wide for so small a pillar, four rooms in the top tier and three well below it, which is what happens when a brewery and a chophouse document the same ranch. Kansas City publishes fifteen Wagyu rooms and has documented three, the widest gap between advertising and evidence anywhere in the state.

Wagyu in Missouri, answered
- How many verified Wagyu restaurants are in Missouri?
- 7 restaurants are verified for disclosed Wagyu sourcing in Missouri, plus 19 more with a menu-confirmed offering. Verified and menu-confirmed are separate: the latter means a current first-party menu advertises Wagyu, but the available evidence does not establish full provenance.
- Can you get Kobe beef in Missouri?
- None of our verified Missouri venues currently show a Certified Kobe badge. That means WagyuSpot has not found both an official venue-directory match and a current Kobe menu claim locally; it is not a conclusion about evidence the directory has not reviewed. See the national Kobe list for current matches.
- What kinds of Wagyu do Missouri restaurants serve?
- Listed Missouri venues disclose American, Australian and Japanese Wagyu, including named origins such as Kagoshima, Senku, Black Opal, Miyazaki. Each listing states what the venue's own menu discloses, plus the grade or producer where one is named.
- Which cities in Missouri have verified Wagyu restaurants?
- Kansas City and St. Louis each have at least two verified venues, which is the threshold for a city page of their own. Verified rooms elsewhere in Missouri are listed on this page rather than under a city.
- How are Missouri Wagyu restaurants verified?
- Each venue is checked against current first-party evidence before it publishes. Documented provenance can qualify for verification; menu-only Wagyu claims appear as menu-confirmed without an authenticity badge. Kobe requires both the official registry and Kobe on the current menu.
