Honolulu is the only city in this directory where every verified Wagyu restaurant grills it at the table. Sixteen of its restaurants publish here and five clear the full sourcing standard, and all five serve yakiniku. Even the steakhouse on the list cooks tableside. The reason is that Honolulu did not import Wagyu as a luxury product. It inherited it as a way of eating. Hawaii has had a large Japanese population for well over a century, and yakiniku arrived as ordinary restaurant food rather than as an expensive novelty, so the format was in place long before A5 became a menu word on the mainland. What that produces is a city where the beef is treated as an ingredient rather than as a trophy.

It changes the economics too. Grilled by the slice, a small quantity of highly marbled beef feeds a table, which is why one of the five sits below the top price tier and why the others are not the special-occasion propositions the same grade would be in a steakhouse city. Two of the five also serve shabu-shabu, so between grill and hot pot, thin-sliced Wagyu is the default preparation rather than the exception.
