Wagyu restaurants in Portland, Oregon

Portland documents its Wagyu narrowly and consistently. Nine of its restaurants publish here and three clear the full sourcing standard, and all three do it the same way: by naming Japan. Every verified room in this city documents Japanese A5, two of them down to Miyazaki prefecture, and none reaches the standard through an American or Australian programme.

Zero rooms hold a licence on the official Kobe Beef Association registry, so no listing here carries a registry-backed badge and every verified room gets there on sourcing detail instead. Two of the three are long-established steakhouses and the third is a Japanese room running an omakase and selling by the ounce, which is also the only one naming an American producer alongside the imported beef.

One small oddity survives the short list: all three verified rooms serve striploin, and it is the cut every one of them names first. In most cities ribeye leads. There is no deep reason for it, but if you are choosing between these rooms you are mostly choosing between three versions of the same cut.

Price will not sort this city for you. All three verified rooms sit in the top tier, and so do half of the six that stop at a menu claim, with the other three one tier below. A Portland room charging top-tier prices is therefore no more likely to tell you where its Wagyu came from than one charging less, which is the opposite of the assumption most people bring to a steakhouse.
