Wagyu restaurants in Oregon

Twelve Oregon restaurants publish here and three clear the full sourcing standard, which leaves nine resting on a menu claim. All three documented rooms are in Portland, so it is the state's only city page and it carries the detail on those rooms; this page is about the shape of the state around it.

Oregon is one of five jurisdictions in this directory where every documented room sits in a single city. That is not the same thing as a state with one city: Beaverton and Tigard publish three Wagyu listings between them and have documented none of them, and both are inside the Portland metro rather than out in the state. Nothing east of the Cascades publishes a Wagyu room here at all, which is a coverage statement about this directory as much as about Oregon.

The documented three all reach the standard the same way, by naming Japan, and none of them documents American or Australian beef. That is worth putting beside the supply side: two Oregon Wagyu farms publish in this directory, Pacific Rogue Wagyu and Lindsay Ranch, and no Oregon restaurant names either of them or any other domestic producer. The state raises Wagyu that its own documented dining rooms do not appear to buy.

Zero Oregon rooms hold a licence on the official Kobe register and zero carry the Certified Kobe badge, and none of the three reaches the top tier. The nine remaining menu claims are all inside the Portland metro, so the whole of Oregon's unread backlog sits within about half an hour's drive of the three rooms that have been read.
