Wagyu restaurants in New Jersey

Twenty-eight New Jersey restaurants publish here and five clear the full sourcing standard, which leaves twenty-three resting on a menu claim. Those rooms are spread across twenty-three separate municipalities, more than in any other state that has no city page, and no New Jersey city has two verified rooms, so this state page is the whole of it.

That shape looks like New Jersey rather than like a gap in our coverage. The state has no single dining centre, and its Wagyu follows the population instead of a downtown: Fort Lee and Leonia up in the Bergen County Korean corridor, Ridgewood, Weehawken on the Hudson waterfront looking back at Manhattan, and Atlantic City down on the shore. Only four municipalities in the state publish more than one Wagyu room at all.

The five verified rooms are two omakase counters, two steakhouses and a Korean barbecue, and two of them are the same house twice, Shumi in Ridgewood and Shumi in Leonia. All five document Japanese Wagyu and none documents American or Australian beef. Blu on the Hudson in Weehawken is the only one that names where the beef comes from, citing Westholme and Allen Brothers.

One New Jersey room holds a licence on the official Kobe register and that same room had Kobe on the menu, so the state's single licence and single badge belong to one venue: B-Prime Steakhouse in Atlantic City, which is also the only top-tier room in New Jersey. The state publishes no Wagyu farms and three Wagyu retailers, the third-largest retail presence of any state, so the buying side of New Jersey is better documented here than the dining room is.
