Eating Wagyu in Georgia

Forty-six Georgia restaurants publish here and six clear the full sourcing standard, which leaves forty resting on a menu claim we could read but could not confirm to that standard. Five of the six are in Atlanta and the sixth is in Duluth, out along the Gwinnett corridor. Fifteen Georgia cities hold a published listing and Atlanta is the only one with two or more verified rooms, so it is the only Georgia city with a page of its own.

Georgia is a Japanese-beef state and very little else. All six verified rooms document Japanese Wagyu, every one of them at A5, and not one documents American or Australian beef. One published Wagyu farm sits in Georgia and no verified Georgia room cites it, or any other producer, anywhere in our records.

The format here is not the steakhouse. Only one of the six calls itself one, four are Japanese rooms and the sixth is a ramen counter, which is an unusual mix for a Southern state at this size. Three of the six serve their Wagyu by the ounce from a counter rather than as a plated steak, and Omakase Table in Atlanta carries a MICHELIN distinction, the only Georgia room in this directory that does.

Zero Georgia rooms hold a licence on the official Kobe register and zero carry the Certified Kobe badge, so the word on a Georgia menu is one we have not been able to match against the register. None of the six reaches the top tier either, and none names a ranch or a brand, which puts Georgia in a group of three: it, Hawaii and Virginia are the only states with five or more verified rooms where provenance stops at the grade and goes no further up the supply chain.
