Wagyu restaurants in Ohio

Forty-eight Ohio restaurants publish here and seven clear the full sourcing standard, with forty-one resting on a menu claim. Columbus and Cincinnati both carry enough verified rooms for a hub of their own, at three and two, and Cleveland and Warren have one each.

The menu-claim tier is what gives Ohio its reach. Those forty-one rows sit in seventeen different cities, and while Cincinnati, Columbus and Cleveland hold the largest groups, eleven are single listings in places with no verified room at all: Hamilton, Troy, Perrysburg, Liberty Township, Centerville, Akron, Beachwood, Brecksville, Dublin, Upper Arlington and Loveland. A menu claim is the weakest thing this directory publishes, but it is often the only thing standing between a smaller Ohio town and no entry whatever.

Three of the seven reach the top tier, a high share, and it is largely a chain story. Two Jeff Ruby's steakhouses, one in Cincinnati and one in Columbus, both document to that level, and so does the Mastro's in Columbus. Where a group runs a single sourcing programme across its rooms, the documentation tends to travel with it.

The most interesting listing is the least expected one. Gatsby's, at a resort in Warren, names Carney Wagyu Cattle Ranch of Southington, Ohio, a genuinely local herd rather than a national brand. It is one of only two Ohio rooms that name a producer at all, the other being the Columbus Mastro's, which cites WinterFrost and Westholme.

One Ohio room holds a Kobe registry licence and one was serving Kobe when we last looked. Five of the seven document Japanese beef, one documents American and one Australian, so despite the local ranch the state still reads as an import market with a single domestic exception.
