Eating Wagyu in Washington

Seventy-nine Washington restaurants publish here and eighteen clear the full sourcing standard, with sixty-one resting on a menu claim. Every one of the eighteen documents Japanese beef, which makes Washington the largest all-Japanese state in the directory. It briefly was not. A Seattle room with a whole-animal butchery programme named a Washington ranch and cleared the standard in August 2026, then went back to the menu-claim tier on review, once it turned out the ranch published its fullblood claim about the herd it breeds rather than about the beef it sells.

It is also the only state that holds Kobe registry licences and shows no Kobe badge at all. Two Washington rooms are licensed. Zero were serving Kobe when we last looked, so the badge is absent here for want of it on the menu rather than for want of a licence, which is exactly why the badge is a conjunction and not a lookup.

Washington spreads further than most states its size. Three cities clear the two-verified threshold, Seattle with seven rooms, Bellevue with four and Tacoma with two, and only thirty-nine percent of the verified list sits in Seattle. Chicago and Las Vegas both concentrate near ninety.

A few producers do a great deal of the work. Three El Gaucho rooms, in Seattle, Tacoma and Vancouver, all cite Davis Family Cattle Company, and Snake River Farms turns up at four more. The cut named most often is the tenderloin, which is genuinely unusual: every other state of this size leads with the ribeye or the striploin.
