What each distinction rates

MICHELIN awards One to Three Stars for the quality of the food on five published criteria: quality of the ingredients, mastery of flavour and cooking technique, the personality of the chef in the cuisine, harmony of flavours, and consistency between visits. The inspectors say plainly that they do not look at the interior decor, the table setting or the service when awarding them.

The Bib Gourmand is a separate award rather than a lesser star. It recognises good food at moderate prices, benchmarked to a three-course meal inside a fixed ceiling that stands at roughly 40 dollars in American cities. MICHELIN Selectedis the remainder of the inspectors’ selection: worth including, without a Star or a Bib. A Green Star sits on top of any of them and recognises sustainability rather than cooking.

A distinction is not a sourcing claim

The guide rates the cooking. It does not audit where the beef came from, and nothing in a Star obliges a kitchen to name a prefecture, a grade or a producer. That is why the two are graded separately here: 6 of the 21 starred venues on this page have documented their Wagyu sourcing to the standard described in our methodology. The rest advertise Wagyu on current first-party material and disclose no provenance, so they carry no authenticity badge no matter how many stars they hold.

Read a card as two facts side by side: the gold chip is the guide’s judgement of the cooking, and the tier is ours about the beef. Neither substitutes for the other.

How this list was built

Every distinction here was read from that venue’s own page in the MICHELIN Guide, where the award is published in the guide’s own words, and recorded with the page it came from and the date it was read. Nothing is inferred from a venue’s marketing, a press mention or a chef’s previous restaurant. Where the guide and our records disagreed, the guide won: this pass removed a star from thirteen venues that hold a MICHELIN Selected listing or a Bib Gourmand rather than a Star, and added stars to two venues that had none recorded.

Identity was matched on address rather than name, which mattered: two Chicago rooms share the name Perilla, and the guide’s listing belongs to the one on North Milwaukee Avenue. Stars are re-awarded annually, so this page states when it was read and makes no claim beyond that date.

Common questions

What do the MICHELIN Stars actually rate?
The cooking, and nothing else. MICHELIN awards One to Three Stars on five published criteria: quality of the ingredients, mastery of flavour and cooking technique, the personality of the chef in the cuisine, harmony of flavours, and consistency between visits. Is a Bib Gourmand a lesser star?
No. It is a separate award, introduced in 1997, for establishments serving good food at moderate prices, benchmarked to a three-course meal within a fixed ceiling that stands at about 40 dollars in American cities. MICHELIN describes it as not quite a star but definitely not a consolation prize.
What does MICHELIN Selected mean?
It is the rest of the inspectors' selection: a restaurant they consider worth including, without a Star or a Bib Gourmand. It is a real distinction and the most common one, and it is not a star. Any directory that renders it as one is overstating it.
Does a MICHELIN distinction say anything about the Wagyu?
Nothing at all. The guide rates the cooking; it does not audit sourcing, and a three-star kitchen can still print an undisclosed wagyu line. This directory grades the two separately for that reason, and most distinguished venues here have not documented where their Wagyu comes from.
How current are these distinctions?
Each one was read from that venue's own page in the MICHELIN Guide on the date shown at the top of this page. Stars are re-awarded every year and restaurants gain and lose them, so treat the level as accurate to that date rather than permanent, and check the guide before travelling for one.
